Evedar’s Bistro on the right track with dinner menu

Tucked away in the bottom of a condo complex in a residential Langford neighbourhood, Evedar’s is easy to miss, but that would be a mistake if you’re hungry.
In the day, the kitchen is the domain of Marnie Anderson, whose efforts helped to establish a solid reputation for this spot long before owners Fran and Marc Jinnouchi took possession last summer. Breakfast includes freshly baked muffins and cinnamon buns along with substantial selections such as omelettes or pancakes — with or without berries and whipped cream. Lunch offers ample salads and sandwiches packed with everything from pastrami and hot mustard to a summery blend of barbecued salmon and cream cheese with hints of lime and cilantro, loaded with fresh vegetables. Hot features include two daily soups, chili and cornbread, or a hot turkey sandwich served with stuffing, vegetables and mashed potatoes, oozing with rich gravy.
Hoping to develop an evening trade that would match the success of the daytime operation, the Jinnouchis were fortunate to retain chef Tom Corless a couple of months ago. Raised in Prince George, Corless is in the third decade of a culinary career begun in high school, which he continued at the College of New Caledonia. He arrived here 21 years ago, earning his papers and his stripes.
Evening visitors to Evedar’s now benefit from Corless’s “flavour in is flavour out” philosophy, namely work with quality ingredients — local where possible — for a quality product. A small but carefully considered menu offers quality dishes you might expect to find at venues such as the Blue Crab Bar and Grill, where he worked as sous chef to Andrew Dickinson and Shawn Morrison — for surprisingly friendly prices.
On my first evening visit, a friend and I shared a couple of dishes with a glass of wine. A rustic tomato and basil tart ($8) accented with roasted garlic and Parmigiano-Reggiano cheese, its earthy tones enhanced by balsamic dressed greens; we agreed this was one of the few times this truly overused acid was an appropriate element.
Karen was surprised at the succulence of the dry-cured salmon. Fragrant with citrus, it was perfectly matched by saffron risotto, and a steal at $22. In fact, the most expensive item on the menu is a 12-ounce AAA Canadian ribeye steak, offered with roasted garlic whipped potato, onion conserve and port infused demi-glace for $28.
Recently returning on my own, I considered grilled calamari, which Corless pairs with Catalan Romesco sauce and lemon garlic crème fraîche, but this will have to wait for a future visit, as seared crab cakes won out. These were paired with a cooling avocado sauce enhanced with grapefruit which produced surprising depth, and smoked paprika aioli. Next up was a spectacular dish that alone is worth the drive to Langford — grilled lamb sirloin à la Niçoise, served in thick slices, drizzled with a red wine sauce enriched with briny black olives, basil, roast garlic and tomatoes, with a melange of crisp vegetables and rosti. I ended with a made-to-order hot chocolate truffle cake, paired with a little scoop of vanilla bean ice cream set on a house-made ginger snap. The price for three courses and a glass of wine, including tax and tip? A very reasonable $65.
In anticipation of cooler months, Corless plans to tweak the menu soon. Expect the likes of angel-hair pasta loaded with shellfish, hearty bouillabaisse, slow braised lamb shanks and beef short ribs paired with king scallops.
Though service is attentive and the food is well on track here, there is still some work to be done. I have never seen a bathroom with two toilets but no stalls before, and the decor is fussy and inconsistent with the kind of food now available in the evenings.
Anyone over 40 should be advised that the lighting is dim in the back room and although live music might be welcomed by some people, we found it distracting. If they continue, it might be better to start this a little later in the evening. The price is right for food, but Karen and I both found the wine list limiting and somewhat overpriced; the option of a half-litre wouldn’t go amiss. But look for more good things to come from this spot.

I love the new owners, the staff seem happier and it seem more relaxed and enjoyable. The food is awesome and I am so glad that they are expanding their hours. It is the place to go to in Langford! Even if you are alone you feel totally comfortable. Great food, great prices and great people.
Evedar’s is truly a little food & coffee haven in the growing city of Langford. The special coffees are exceptional and the food is fresh, from scratch and like wonderful home cooking. Marco and his staff do a wonderful job in making the customers feel like family and friends. Marco takes the time and the care with all his customers no matter how busy he is. I’ve only been a few times, yet he remembers me by name each time I’ve visited. I will definitely be going back to visit to take in the fantastic food, coffee and atmosphere. Thank You Evedar’s.
Was at Evedar’s for dinner the other night with my family celebrating my birthday. The owners are awesome, balloons at my table, excellent service from the owners and the food was to die for. Great presentation and excellent atmosphere. Would recommend to anyone, you need to try this cute little Bistro.
Awesome neighbourhood bistro…a new Victoria’s Secret just waiting to be discovered. Locals have built it over the years and now they have a wonderful new community-minded couple who own it. New menus, cool music on Saturday nights and a wonderful cozy and comfortable place to enjoy good food at great prices.
Wife and I had dinner here last night. Great place! Good food, friendly, relaxing, wonderful atmosphere. Owners offered fantastic service. A really good live classical guitarist in the background topped it all off. Highly recommended!
The new ownership adds a whole other level of passion and community to this already great restaurant. It’s amazing, being able to eat some incredible food and listen to great guitarists on a Saturday night, and walk outside afterward and totally feel like you’re in a different city.
This is a pleasant little bistro with an exceptional array of food. We were there on Saturday, May 8th and were entertained Adam Barter who gave a stellar performance with his singing and guitar playing. The meal was delicious and the service was excellent! Great ambience too!
Had dinner at Evedars tonight. Wow! Who would have thought you could get such an awesome meal with great entertainment in Langford. Well done. I will be back.
I’m just afraid that if the word get’s out I won’t get in, it’s that good.
Evedar’s Bistro has become my preferred place to grub up… the new chef is even better than the last, and things just keep getting better. I will be moving off the island soon, and what will I miss the most? The parliament buildings at night? The ocean waves? Nahh! It’s Evedar’s flame grilled Ribeye steak, with such artful, flavourful, thoughtful taste combinations… Tom makes a piece of beef into a work of art. And I know my meat… I lived in Argentina, famous for its beef, and none of it compared. Try it, and you’ll know exactly what I mean. Everything is so good, if I could afford it I’d be there every single day. That’s pretty much my only complaint–that I can’t afford to eat there for every single meal. Marc and the staff are a pleasure to deal with, and the decor is eclectic and warm. We love the coziness so much, we had our wedding reception here! I will miss my ritual of breakfast and coffee over a magazine on Saturday mornings, and the joy of ordering take-out from a place that hits the mark single every time.

I went to hear blues performer Rockland Moran as my first time at Evedar’s and I want to go back to eat – the Tiramisu was incredible! I write a weekly column for the Victoria Blues Society e-newsletter (hence my interest in Rockland) but the review of his performance is mixed up now as a bistro review! I love Evedar’s ambience, the eclectic decor feels comfortable, and I’m looking forward to trying out the doutdoor sidewalk patio when it’s warmer. I particularly noted the friendliness of the server staff, and that the bartenders clapped along with the receptive patrons as Rockland performed. A very nice pleasurable surprise to discover Evedar’s for its own merits besides as a venue that supports this wonderful music.
While the Tiramisu is in shareable portions, I’ll be stabbing someone with a fork if they try to get a nibble off mine! I’m looking forward to trying the dinner lamb next time and trying out the outdoor sidewalk patio when it’s warmer.
